My easy, weeknight go-to meals

There’s no doubt that many of us rush through our days, just to make it home for 5pm to remind us, what the f am I going to have for tea?!

Obviously, the best way to avoid this panic is to plan our meals for the week ahead, perfect. Sometimes it’s not always that easy! Maybe it’s been a weekend away that’s left you (and your fridge) high and dry.

To combat this, I have my easy weeknight go-to meals. The word meal is used loosely as it’s almost thrown together!

I do a 20 min dash in Pak n Save, where I grab my go-to ingredients. I will write a list in my iPhone notes to keep me on track. It looks something like this…

Whole Carbs:

Microwave sachet of black rice/brown rice and quinoa

Turkish bread pizza bases

Corn chips (Natural, like Mexicano’s or Proper)

Wholemeal wraps or wholemeal pita

Rye bread

Brown rice noodles

Pulse pasta

Protein:

Tofu

Free range Eggs

Free range Chicken

Tinned legumes (beans)

Falafel

Fruit and Vege:

Packet coleslaw

Tinned tomato’s

Tomato passata

Avocado

Banana

Apples

Frozen vege (edamame beans, green beans, peas, broccoli and cauli, capsicum)

Something on special like red onion or mushrooms

Now I have stocked my fridge and pantry with some easy and versatile whole food ingredients, I have lots of options for quick meals.

Pesto Pasta (add spinach, vege, protein of choice-I go for falafel)

Budda Salad Bowl (coleslaw, rice, falafel)

Pizza (cauliflower turkish bread base, passata, lots of vege, cheese, add chicken if preferred)

Tofu Tomato Pasta (see IG for recipe)-or other pasta options

Tofu Dan Dan Noodes (see Miss Pollys Kitchen IG)-or other stir fry options

Mexican Bean Mix (I’d cook a big batch and use this for two meals-nachos, enchilada’s, burrito bowl)

I use the principles of a ‘Balanced Plate’ to create these meals:

  1. Whole Carbs

  2. Lean Protein

  3. Lots of Vege

  4. Healthy Fats

With the right ingredients, and these principles, you can put together an easy weeknight meal that doesn’t take lots of time or money but, is balanced and nourishing.
